A refined twist on an old favourite – tea bread or tea loaf has been made in households all over the UK, gaining popularity during and after the war years due to its cheap and frugal use of ingredients. It was perfect as a treat for the family but crucially continued the ‘waste not want not’ ethos of the country at that time. The twist, if I can even call it that is to replace regular black tea with Earl Grey – a tea that has been mixed and flavoured with oil of bergamot. Bergamot is a small citrus fruit that grows in southern Italy and Spain, the oil comes from the peel which is packed in with the tea to impart its essential oils. We soak the dried fruit in the tea overnight giveing it plenty of time to plump up and take on all the flavours. Serve buttered with your favourite brew.
