A crisp, elegant and dry fruity wine. It has both charming fruit from the Sauvignon and weight from the Semillon. The extra distance from the coast gives the wines a slightly fuller and richer character because of the warmer climate.
Food Matches - white meat, fish and salad. Also perfect as an aperitif.
This wine is produced on the Chateau des Eyssards estate in Bergerac, inland from Bordeaux and on the edge of the picturesque Dordogne. The vineyards are still managed in a traditional way, with close planting to stress the vines; this produces low yields and fruit which is high in intensity and flavour. The vinification process is modern, carried out at cool, controlled temperatures in stainless steel tanks. Bottling is straight from tank, with no oak ageing. Chateau Billot is produced on a stunning 40-hectare estate in the beautiful countryside around the town of Bergerac. Owner Pascale Cuisset is acknowledged as one of the best up-and-coming winemakers of the area. He believes that whilst technology is important, the skill of the winemaker is paramount in producing wines that stand out from the rest. He successfully combines tradition with modern techniques to produce wines with real character and heritage that appeal to today's wine drinkers.
